Ingredients
For this recipe, you will need the following ingredients:
- 1 whole chicken, cut into 8 pieces
- 500 ml coconut milk
- 2 stalks lemongrass, bruised
- 3 kaffir lime leaves
- 2 bay leaves
- 2 cm galangal, sliced
- 2 cm ginger, sliced
- 4 cloves garlic, minced
- 6 shallots, minced
- 3 red chilies, sliced
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp oil
Preparation
Before cooking, you need to prepare the ingredients. Cut the chicken into 8 pieces and set aside. Bruise the lemongrass stalks and tear the kaffir lime leaves into small pieces. Slice the galangal and ginger. Mince the garlic, shallots, and red chilies.
Cooking
Heat the oil in a pot over medium heat. Saute the garlic, shallots, and red chilies until fragrant. Add the coriander powder, cumin powder, and turmeric powder. Stir well.
Add the chicken pieces to the pot and stir until the chicken is coated with the spices. Add the lemongrass, kaffir lime leaves, bay leaves, galangal, and ginger. Stir well.
Pour in the coconut milk and stir well. Add the salt and sugar. Bring the mixture to a boil. Reduce the heat and let it simmer for 30-40 minutes until the chicken is cooked through and the sauce has thickened.
Serving
Once the chicken is cooked, turn off the heat and let it cool for a few minutes. Serve the opor putih with steamed rice and garnish with some sliced red chilies and chopped coriander leaves.
