  • 4 kaffir lime leaves
  • 4 lemongrass stalks, bruised
  • 4 bay leaves
  • 2 tbsp. tamarind juice
  • 2 tbsp. palm sugar
  • Salt to taste
  • Oil for frying

Preparation:

Step 1: Fry the chicken

Heat some oil in a pan and fry the chicken until it is golden brown. Remove the chicken from the pan and set it aside.

Step 2: Make the spice paste

Using a food processor, blend the following ingredients into a smooth paste:

  • 10 shallots
  • 5 garlic cloves
  • 5 red chilies
