Introduction
Gulai ayam is a traditional Indonesian dish that has been enjoyed by many Indonesians for generations. This dish is a perfect blend of spices and herbs with tender chicken pieces. - 1 whole chicken, cut into pieces
- 2 cups of coconut milk
- 2 cups of water
- 3 kaffir lime leaves
- 3 bay leaves
- 3 lemongrass stalks, bruised
- 2 turmeric leaves, finely sliced
- 2 tablespoons of tamarind paste
- 2 tablespoons of salt
- 1 tablespoon of sugar
- 1 tablespoon of cooking oil
Preparation
Step 1: Prepping the chicken
Wash the chicken pieces and pat them dry with a paper towel. Set aside.
Step 2: Preparing the spices
In a mortar and pestle, grind the following ingredients into a paste:
- 10 shallots
- 5 cloves of garlic
- 5 red chillies
- 3 bird's eye chillies
- 1 thumb-sized ginger
- 1 thumb-sized galangal
Step 3: Cooking the dish
- Heat the cooking oil in a large pot over medium heat. Add the spice paste and sauté until fragrant, about 5 minutes.
- Add the chicken pieces and stir until they are coated with the spice paste.
- Add the coconut milk, water, kaffir lime leaves, bay leaves, lemongrass stalks, turmeric leaves, tamarind paste, salt, and sugar. Stir well and bring to a boil.
- Reduce the heat to low and let it simmer for 30 minutes or until the chicken is cooked through and the sauce has thickened.
Tips
- For a spicier version, add more red chillies or bird's eye chillies.
- For a milder version, remove the seeds from the chillies before grinding them into a paste.
- For a richer flavor, use freshly squeezed coconut milk instead of canned.
Serving
Gulai ayam is best served hot with steaming white rice. You can also serve it with some sambal or pickles on the side for an extra kick of flavor.
